Top Tacos for Texas Monthly

I hit the road in October for Texas Monthly’s Top Taco’s feature. I first traveled to Mission, Texas where James Beard Award winning chef, Ana Liz Pulido, throws down some of the most incredible tacos I’ve ever had. Her humble and kind family grinds the fresh maiz for the tortillas daily in their small kitchen at Ana Liz Taqueria. My highlight: The Chile Relleno Taco

There was never a doubt about how special tacos are in Texas. But from what I’ve gathered from this assignment and ALL of my taco experiences around the country, the best tacos are always the ones that give maiz the respect and love that it deserves. It’s a time-consuming and involved craft, grinding down the maiz every day, that demands you adapt your recipes to the offerings of each season but it is what sets these places apart from your local taco spot, that although it may be good, it may not be THIS good.
